After 2 years of waiting, plus 2 ½ months of trickle smoking with 4 different types of wood, Pop’s ham is here. The Old World process of piping in smoke from a fire chamber is alive, well and thoroughly welcomed. As you’ve seen in older posts, it’s been several years since he’s been able to get back on track after moving to his farm.

The balancing of sweet fruit woods with those of more prominence, gives it a lucid spectrum of flavors that linger gracefully. It’s not even fair to compare this to your normal supermarket hams. This is the power of schinken. You also don’t get the marbling, which melts in your mouth like sweet cream.

.

On my first bite, my mind was awash with some old Funkadelic lyrics as my taste buds aligned with my emotions: “Dedicated to the feeling of good, and Baby I’m good, at being good…and nothing is good, unless you play with it.”

Hot damn, that's some good ham. Is he still smoking sausage, too?

Shonuff. His last batch was a Plum Texas sausage. Not made with plums but from a Germanic town named Plum outside of La Grange. He also made linguica that was rockin good. Are you still commencing with our WT-offs?

Oh yeah....we had a WT git down two weekends ago. Made Twinkie Tiramisu with Bacon-Banana-Chocolate Chunk Ice Cream. It was sweeeet glorious oil-soaked titties.....wish you coulda been there, brother!
